Swiss Rösti

We are continuing our A Taste of the Alps Series, where we bring you recipes straight from mountain huts in the Alps. This week we are introducing Rösti, a simple potato dish often served as a vegetarian lunch or dinner. Rösti is gluten and dairy free.

This recipe was not sent to us by any of our huts, but it is a dish we enjoy often at huts in Switzerland. You can certainly find this dish on our Bernese Oberland Traverse or on the Walker’s Haute Route, which travels from Chamonix to Zermatt.

Rösti Ingredients:

  • 500 g. (1 lb. 2 oz.) peeled and grated potatoes
  • 1 tsp. salt
  • 1 onion diced
  • A pinch of pepper
  • 1 egg
  • 3 Tbs. fat for frying (butter or oil)

Directions:

  1. Peel and grate the potatoes
  2. Peel the onion and chop it into small pieces
  3. Mix the potatoes with the onion, salt and pepper
  4. Heat the fat in the pan and press flat. Fry on low heat for 5 to 6 minutes (or maybe even 15 minutes) until golden brown
  5. Flip carefully onto a plate. And return to pan. Fry for another 5 to 6 minutes (or maybe even 15 minutes) until golden brown
  6. Fry an egg
  7. Serve the Rösti on a plate with the fried egg on top
