Kaiserschmarrn Recipe - A Taste of the Alps Series

This is the second in a series of recipes that are served at mountain huts throughout the Alps. We reached out to many of the huts we work with on a regular basis and asked them for recipes that they would like to share with you.

As we roll out this series, we are in the middle of the COVID-19 pandemic. Many of our customers aren't sure whether or not they are going to make it to the Alps and quite a few people who had travel plans this summer may not be able to follow through with them. This series is our effort to connect you to the mountain huts in the Alps by giving you the chance to prepare their delicious dishes at home. It's worth mentioning that I'm often quite a disaster in the kitchen, so anything can really happen during this series.

This recipe is called Kaiserschmarrn, and it's delicious! Yummy! It's basically a very sweet and fluffy pancake that is broken into bite-sized pieces, sprinkled with powdered sugar and served with apple sauce and lingonberries (if you don't have lingonberries, you can just stick with applesauce). You'll find it in Austria, Germany and even Italy. It's a dessert, but can be eaten as a meal instead. Follow along with the video and check out the recipe below.

  • 5 eggs

  • 40 g. (1/4 cup) + 1 Tbs. powdered sugar

  • 230 g. (1 7/8 cup) Flour

  • 375 ml. Milk (1.6 cup)

  • A pinch of salt

  • 4 Tbsp. Baking fat

  • 1 Tbs. granulated sugar

For serving:

  • Apple Sauce

  • Lingonberries (if available)


  1. Mix the powdered sugar with the egg yolks until foamy. Then add flour, salt, and milk

  2. In a separate bowl mix the egg whites until very foamy (looks like snow)

  3. Fold the egg whites into the egg yolk batter gently by hand

  4. Melt the baking fat in a large pan and pour in batter

  5. Let it sit until the bottom side is golden brown (approx. 10 minutes)

  6. Flip (we recommend separating it into quarters and flipping each individual quarter) and let it sit until golden brown (approx. 10 minutes)

  7. Break apart gently with a fork into bite-sized pieces and let it cook until all sides are golden brown (approx. 10 minutes). Add granulated sugar and mix in

  8. Sprinkle with powdered sugar and serve with apple sauce and lingonberries.
