Hütten Rösti (A Taste of the Alps Series)
We are continuing our A Taste of the Alps Series, where we bring you recipes straight from mountain huts in the Alps. This week we are introducing Hütten (Hut) Rösti, a simple potato dish often served throughout Switzerland. This is a slightly fancier version than the Swiss Rösti recipe we shared earlier.

This recipe was not sent to us by any of our huts, but it is a dish we enjoy often at huts in Switzerland. You can certainly find this dish on our Bernese Oberland Traverse or on the Walker's Haute Route, which travels from Chamonix to Zermatt.
Hütten Rösti Ingredients:
3 grated potatoes
100 g. (1 1/4 cup) cheese (we prefer emmentaler, also known as Swiss Cheese in the U.S.)
100 g. (3/4 cup) cubed schinken (cooked bacon or ham work well as well)
Chives
Salt & pepper
Oil
Directions:
Preheat oven to 180° C (356° F)
Grease a baking dish with the oil
Add grated potatoes to the baking dish and sprinkle schinken, salt and pepper on top. Mix together and push down flat
Bake for 15 minutes
Add cheese on top and return to the oven. Bake for 10 more minutes
Sprinkle chives on top and enjoy
