Bergsteiger Omelet Recipe - A Taste of the Alps Series
We are continuing our Taste of the Alps Series, where we bring you recipes straight from mountain huts in the Alps. This week we are introducing the Bergsteiger Omelet. Bergsteiger means "mountain climber," so if you like to climb mountains, you'll definitely want to try this recipe.

I would like to thank Rifugio Sennes, or Sennes Hut, for sharing this delicious recipe with us. The Sennes Hut lies on the famed Alta Via 1 trek, which is Italy's highlight long distance trek.
Ingredients:
2 Tbsp. Flour
A pinch of salt
A little milk
2 eggs
Oil for cooking
Chives
Cheese
Ham
Diced Tomatoes
Directions:
Mix the eggs, milk, salt and flour
Heat the oil in a small pan
Pour the egg mixture into the pan
Once the omelet is solid enough, flip it
When the bottom side is cooked through, add the chives, cheese, ham and diced tomatoes. Fold in half and cook until the cheese is melted

As we roll out this series, we are in the middle of the COVID-19 pandemic. Many of our customers aren't sure whether or not they are going to make it to the Alps and quite a few people who had travel plans this summer may not be able to follow through with them. This series is our effort to connect you to the mountain huts in the Alps by giving you the chance to prepare their delicious dishes at home.
