Älplermakkaroni - A Taste of the Alps Series

We are continuing our A Taste of the Alps Series, where we bring you recipes straight from mountain huts in the Alps. This week we are sharing the simple and hearty Älplermakkaroni Recipe from the Swiss Alps. You might recognize the name a little better if I call it Alps Macaroni.
This recipe was sent to us by Berghaus am Oeschinensee, which is located on the Bernese Oberland Traverse. Not only is the Berghaus am Oeschinensee in an idyllic setting, but it's also a great place to celebrate the last night on a hike through the most beautiful region, in my opinion, in the Swiss Alps.
Ingredients:
500 g. (1 bag) macaroni - 3/4 cooked
1 large potato - 3/4 cooked
1 diced onion - sauteed
200 g. (1 1/2 cup) cubed speck (use cooked bacon or ham)
5 dl. (3 1/2 Tbs) cream
100 g. (1 cup) raclette cheese (Swiss cheese works well) - double it if you like cheese
Salt & pepper
Directions:
Preheat oven to 175° C (350° F)
Cook macaroni and potatoes until they are about ¾ cooked
Fry the onion and speck
Combine macaroni, potatoes, onion and speck in a baking dish
Season with salt and pepper and pour 5 dl. of cream and cover in cheese
Bake at for 15 to 20 minutes
